Kitchen notes

Seasonal notes from the market

A few thoughts on choosing vegetables when the market stalls are doing half the cooking for you.

The easiest food often starts with whatever looks most alive at the market.

What I look for

  • Vegetables that feel heavy for their size
  • Herbs with crisp stems
  • Fruit that smells like itself before you cut it

Good ingredients do not need much ceremony. Salt, heat, and patience usually get you most of the way there.
