- 350 g pasta
- 2 tablespoons olive oil
- 1 small onion, finely chopped

- 2 tablespoons tomato paste
- 1 can chopped tomatoes

- 40 g grated Parmesan
- Salt, black pepper, and dried oregano
Method

- Stir in the tomato paste and cook for 1 minute. Add the chopped tomatoes and oregano, then simmer for 10 minutes.
- Lower the heat and stir in the cream and Parmesan.
- Add the drained pasta. Toss well, loosening the sauce with a splash of pasta water when needed.
- Taste, season, and serve with extra Parmesan and black pepper.
Add a handful of spinach with the cream if you have some waiting in the fridge.
